Wash and dry all produce. Adjust rack to middle position and preheat oven to 400°F. In a #medium pot{}, bring 3½%cups water and @veggie stock concentrate{1%unit} to a boil. Halve @orange{1%unit} and @lemon{1%unit} crosswise. Peel @sweet potatoes{1.5%lbs}, then cut into ½-inch cubes. Drain and rinse @chickpeas{15%oz}.

Toss @sweet potatoes{1.5%lbs} on one side of a #baking sheet{} with a drizzle of @olive oil{3%tbsp} and a pinch of @salt{1%tsp} and @black pepper{1%tsp}. Toss @chickpeas{15%oz} on other side of sheet with another drizzle of @olive oil{3%tbsp} and a pinch of @salt{1%tsp} and @black pepper{1%tsp}. Roast in oven until @sweet potatoes{1.5%lbs} are tender and @chickpeas{15%oz} are crisp ~{20%minutes}.

Once stock is boiling, add @farro{1.5%cups} to pot. Cover, lower heat, and simmer until tender ~{25%minutes}. If there is still water in pot after cooking, drain @farro{1.5%cups}, then return to pot.

In a #medium bowl{}, whisk together 1%tsp @dijon mustard{1%tbsp}, juice from 1 @lemon{1%unit} half, juice from 1 @orange{1%unit} half, and a large drizzle of @olive oil{3%tbsp}. Season with @salt{1%tsp} and @black pepper{1%tsp}.

Halve, peel, and pit @avocado{1%unit}, then thinly slice. Toss @farro{1.5%cups} with half the dressing.

Divide @farro{1.5%cups} between plates. Toss @arugula{4%oz} with as much of the remaining dressing as you like, then place on top of @farro{1.5%cups}. Arrange @sweet potatoes{1.5%lbs}, @chickpeas{15%oz}, @avocado{1%unit}, and orange pieces on top, then sprinkle with @almonds{2%oz} and @feta cheese{2%oz}.
